Sesame Ginger Carrot Salad

SESAME GINGER CARROT SALAD – gluten and dairy free.

My favourite salad, especially when served with seafood, fish and scallops especially.

Place in a bowl the following ingredients

2 carrots, grated

1 red pepper, sliced bite size

2 celery stalks, sliced bite size

1/4 of a sweet onion, finely diced

1 handful Cilantro or parsley , chopped

2 tbsp. toasted sesame seeds, (toss in a hot frying pan swirl around for a minute until brown, use caution)

1/4 of a cucumber, sliced thinly in lengths


3 tbsp. sesame oil

2 tbsp. fresh lemon juice

1 tbsp. honey

2 tbsp. gluten free soya sauce

1 tsp fresh grated ginger

1 sm. garlic clove grated

sea salt to taste

Toss dressing into main ingredients, plate and serve.
