Potato Latkes

POTATO LATKES  - gluten and dairy free. Pan fried, crisp and tasty grated potatoes topped up with apple sauce, or my favourite, smoked salmon with dill, will please any crowd. Be sure and make extra because they disappear fast.

Peel three large potatoes, and grate them into a bowl. Then add two eggs, along with 1/4 of a finely diced onion, salt and pepper to taste, 2 tbsp. gluten free flour and a 1/2 tsp. of baking powder, (optional).  Mix well.

Heat a skillet and add a high heat oil, I prefer avocado oil. Drop the above mixture by the small spoonful, a bite size into the frying pan, smooth out. Cook over medium heat until brown and turn them to do the same on the other side. Remove from pan when cooked.
These are tasty on their own or topped with apple sauce; another favourite is smoked Atlantic salmon with fresh dill and capers. Enjoy!
