Avocado Chocolate Raspberry Swirl


– Gluten and dairy free. A rich desiccant dessert that is best served in an adorable sherry glass. Love this easy, satisfying delight.


In a processor - place the following ingredients

1/2 cup of high fat coconut milk, along with ½ cup of sweetener,( I use a coconut sugar, or honey), ½ cup of raw cocoa powder, and 2 tsp. vanilla, or fresh vanilla bean paste, 2 tsp of light olive oil, 1/4 cup pecans, a hint of sea salt, 2 ripe avocadoes, with a touch of lime juice to keep them green.

Process until the above mixture is smooth. I serve this dessert in little glasses I have collected over the years, one layer of the chocolate mixture with a layer of fresh berries. Raspberries are a favourite of mine, but I have used many other berries too.


Optional -  top with fresh fruit and a whipped coconut milk
