Baked Citrus Rhubarb with Mint
– This is a delightful tangy citrus dessert fantastic on its own or with a scoop of vanilla bean ice cream. The rhubarb is cut into 4 to 5 inches in length, and then spread out on a baking sheet.
Squeeze fresh orange juice, add sliced mint leaves and drizzle with a hint of honey. Bake at 375 F for 30 minutes or until tender.
If you have any left it keeps well in the fridge. Enjoy
